Trout farming is not an easy task. This fish is extremely picky and can only survive in spring-fed clean water, fed with natural food.
Roman Rzadkosz – co-owner of an inn, trout farmer, and nature guardian by passion – dedicates himself to this task with enthusiasm and commitment.He oversees the entire 3-year life cycle of each of his fishfrom embryo (in a self-built incubator) through the maturation period until the moment when the mature individual measures 30-35 cm and is perfectly suitable for consumption.
Trout is the common name for several species of predatory fish from the salmon family that inhabit freshwater with fast currents, especially the upper reaches of rivers.
Depending on the variety, it has white or slightly pink lean flesh and provides the highest amounts among freshwater fish of the valuable Omega-3 and Omega-6 fatty acids that are beneficial for health. Additionally, trout provides high-quality protein, which in terms of composition rivals that found in red meat and, furthermore, is easier to digest.
Trout is recommended for those watching their weight due to its low calorie content.
In Polaniorca, we serve trout from our own farm in several ways. One of its most unconventional versions is "Dunajecki trout tartare". This extraordinary dish was appreciated by the members of the prestigious competition jury "Tatra Brand 2022", awarding us the first prize in the "Food Products" category.

Biały Dunajec is home to the annual Trout Day. As part of this outdoor event, a culinary competition is held for the best dish featuring this noble fish. The dishes are judged on taste, aesthetics, and originality.
The compositions designed and prepared by our culinary team have already won gold and silver multiple times, and the trout dishes available on our menu are inspired by the finest of these winning dishes.
